Healthe Recipe: Watermelon and Feta Salad

Looking for a refreshing salad – look no further. This salad is simple and perfect for a hot summer day!

Servings: Yields 6 – 8

Prep Time: 10 minutes

Ingredients:

6 cups cubed watermelon
1/2 cup feta cheese
1/3 cup fresh mint leaves, chopped
1 teaspoon kosher salt

Optional Ingredients:
Balsamic vinegar
1/2 red onion, chopped

Directions:

1. In a large bowl combine watermelon, feta, and mint. (Go ahead and include the balsamic vinegar and red onions if you decided to include in the recipe) Stir until ingredients are well combined.

2. Serve chilled.
